Worked on a subcontract (Self Employed) basis

The CONFIDENTIAL was awarded eleven projects by the European Social Fund to train staff in Small and Medium Sized Enterprises in the following fields :
a) Information Technology
b) Quality and Environmental Management Systems
c) Procurement
d) Developing Small and Medium Sized Managers
e) Waste Minimisation
f) Environmental Management Systems

My main duties on the Projects were :

Identifying eligible companies in the various designated areas, developing and maintaining a comprehensive Database of these companies, Design and development of Marketing and Course material. Negotiating costs with Training Providers and Training Venues. After initial contact with the companies by the Marketing Team, ensuring that all relevant Administration work completed before the course commenced. Ensuring that all follow-up administration work was being carried out by the trainees. Collecting all the data from trainees for auditing purposes by the European Social Fund.

Information Technology experience

Responsible for the maintenance of 2 PC's. I have gained experience in Windows 3.11, Dos 6.2, Windows 95, Microsoft Word, Microsoft Excel, WordPerfect 7 and Lotus SmartSuite '97. During this period I was responsible for all software and hardware installation and maintenance, this included installation of modems, tape backup, scanner and printer. I also gained experience with Microsoft Internet Explorer and Netscape Navigator.


SEPTEMBER 1995 - MARCH 1996

Responsible for Front Office and Food & Beverage Departments

Main Duties:

Staff Training. Implementing and upgrading Front Office and Food & Beverage systems, duty manager shifts, marketing, food and beverage cost control and menu planning.

Information Technology experience

Here I worked on the Microsoft Innsite Front Office System. I was responsible for maintenance and training on the network system, as well as installation and maintenance of hardware and software. If the system failed it would be my duty to correct the problems together with hardware/software support.

NOVEMBER 1992 - AUGUST 1995

Employed as Senior Assistant Food & Beverage Manager by CONFIDENTIAL, and promoted to Hotel Financial Controller and Front Office Manager on 1st October 1993, Personnel Manager was added to my portfolio on 1st April 1995.

Information Technology experience

I was responsible for the Computerised Food and Beverage system. This required the carrying out of regular hardware and software maintenance. Set up two PC's for VIP Payroll Package and RDS Debtors System. I was responsible for all the hardware, software and training on these systems.

Main Duties: Financial Controller

Completing daily revenue and audit reports, processing creditors and debtors, signatory on Hotel Cheque account, completing monthly reconciliation's and Profit/Loss statements (Hotel and Timeshare), processing all monthly Food & Beverage reports, reconciling Petty Cash and Cheque account, purchases and controls for Curio Shop. Instituted control procedures for floats, cash-ups and standard stocks. Compiling annual budgets - Hotel and Timeshare.

Main Duties: Front Office Manager

Daily checking of arrivals and departures - leisure and conference, compiling monthly staff rosters - Front Office and Security Staff. Checking outstanding in-house ledger accounts and transferring city ledger accounts, duty management and night audit.

Main Duties: Personnel Manager

Established new Personnel system; checking and controlling salaries clerk, liaison between Staff and Provident Fund, Pension Fund and Head Office. Facilitator on Food & Beverage and Rooms Division training programme, following guidelines set down by Hotel Industry Training Board.

In charge of Cellar, Ladies Bar, Restaurant and standard stocks. Compiling monthly rosters for all Food & Beverage staff, opening and closing procedures. Cashing-up and involved in compiling annual Food & Beverage Budget

Information Technology experience

Here I was involved with the team that installed a new computer system. The CLS Front Office System had to be configured for the Hotel's specific needs. This was done over a period of 15 days. Responsible for the sourcing and installation of a new Food and Beverage computer system.

Main Duties:

Responsible for Cellar, Ladies Bar, Action Bar, Banqueting Bar and standard stocks. Compiling monthly statistics report for Hotel and Head Office. Compiling monthly management and staff rosters. Involved in all aspects of disciplinary action, facilitator on Food & Beverage training programme, staff training and Acting Food & Beverage Manager.

OCTOBER 1990 - FEBRUARY 1991

Employed as Food and Beverage Controller by CONFIDENTIAL.

Information Technology experience

I gained extensive work in the Microsoft Micros Food and Beverage System. Worked on this at the Front of House and Management/Audit level. Also involved in maintenance and training on the system.

Main Duties:

Responsible for cost control, stock reconciliation and weekly balancing of sales and stock for the a la Carte Restaurant, Take-Aways and Fish Market. Also served as relief Restaurant Manager.


AUGUST 1989 - AUGUST 1990
