Some Very Easy Vegan Snack and Meal Ideas for Beginners!

  1. Beans on toast (use wholemeal bread and dairy-free margerine. Tastes just as good without any margerine).
  2. Baked potato (can also be microwaved) with baked beans and nutritional yeast flakes (optional).
  3. Salad sandwich with mustard/pickle/or vegan mayonnaise
  4. Mashed avocado on rye bread/or wholemeal french stick. Top with salad items such as tomato slices/mustard and cress/alfalfa sprouts etc.
  5. Peanut butter (or tahini) and mashed banana sandwich.
  6. Toast and yeast extract e.g. Marmite/Vegemite (not Bovril.)
  7. A large salad. Select and prepare various salad items. Make an olive oil and white wine vinegar dressing: mix 1 tsp of olive oil with 3 tsps white wine vinegar and some dried mixed herbs.
  8. Homemade Vegetable Soup.
  9. Wholemeal pitta bread with hummous and salad.
  10. Wholewheat spaghetti with vegan pesto. (Check the pasta does not contain eggs.)
  11. Yogurt. Sugar-free soya yogurts can be bought in health food shops. Try making your own soya yogurt
  12. Any item of fresh fruit e.g apples, pears, bananas, grapes, melon slices, peaches, apricots etc.
  13. Dried fruits - apricots, dates, figs, sun-dried bananas, raisons, ready to eat pears/peaches/prunes etc.
  14. Unsalted nuts - almonds, brazils, hazelnuts, cashews, or mixed nuts and raisons.
  15. Seeds - pumpkin, sunflower.
  16. Stewed fruit with custard. Use soya milk when making the custard.
  17. Unsweetened muesli with soya milk or fruit juice. Top with chopped banana or stewed fruit.
  18. For a cooked breakfast try: toast, baked beans, grilled tomatoes and mushrooms.
  19. Scrambled Tofu on Toast.
  20. Tofu Omelette
  21. Ice lollies - if you must be naughty then try these easy, no-fat lollies - they're nice! Mash two, large, ripe bananas and put the mixture into 4 lolly moulds. Allow to freeze. (If you don't have lolly moulds, then whole bananas can be frozen instead.) Similarly, pure orange juice can be frozen in lolly moulds for an ice-cold, healthy treat!
