


| 2 Hot smoked Trout Fillets | ½ Pint orange juice |
| 1 pinch of dill (dried or freshly chopped) | Butter |
| Orange segments | 1 tsp cornflour |

Add ¾ orange juice to melted butter, heat gently and add orange segments & dill.
Make a paste with remaining orange juice and cornflour, add to mix and stir until thickened.
Transfer to oven proof dish, pour sauce over trout fillets, cover and bake in oven until hot.
Garnish with twists of orange.
