Tomato
and red onion salsa
This
is good in pitta breads, or slices of bread toasted with olive oil –
or just as a spicy side dish.
Put tomatoes in a large bowl and pour
boiling water over them, remove them after 30 seconds and peel off
skins with a sharp knife. Scoop out seeds and chop finely. Mix with
one chopped red onion, 2 tbps olive oil, a small green chopped chilli,
a squeeze of lemon and salt and black pepper.
