About Pistachios

Pistachios grow on trees in clusters like bunches of grapes. 

The majority of the world’s production comes from Iran, with other areas of production being USA (California), Turkey, Syria, Greece and Italy . The pistachio tree is a biennial bearer, which means one year it has a high yield and the following year it will have a low crop.

In Iran the nuts are harvested once a year in September/October . On ripening the hull turns a red/green and  the shell inside the hull will have split open naturally. The soft outer hull is removed within 24 hours of harvesting. Subsequent drying allows the shell to open further to reveal the inner distinctive green kernel.
