CHICKEN AND HAM CANNELLONI


INGREDIENTS:

2 Tablespoons Oil

1 small Onion, chopped finely

175gm (6oz) finely diced, pre-cooked Chicken

125gm (4oz) lean Ham, chopped finely

65gm (21/2oz) full fat soft cheese with Garlic and Herbs

Salt and Pepper

8 "no pre cook" cannelloni tubes

3 tablespoons Parmesan cheese

TOMATO SAUCE

1 tablespoon Olive Oil

1 Large Onion, chopped finely

2 Cloves Garlic, crushed

1x 397gm (14oz) can peeled or chopped tomatoes

2 teaspoons sugar

3 tablespoons tomato puree

150ml (1/4 pint) water or chicken stock

1 teaspoon dried mixed herbs

 

First prepare the sauce. Heat the oil in a pan and add the onion and garlic. Cook over a moderate heat until soft but not brown. Add the remaining ingredients. Bring to the boil, stirring to break up the tomatoes. Lower the heat, cover and simmer for 40 minutes.

Meanwhile, prepare the cannelloni. Heat the oil in a frying pan, add the onion and fry over a moderate heat until soft. Remove from the heat and add the chicken, ham, soft cheese, salt and pepper. Mix well and use to fill the cannelloni tubes.

Place the filled tubes in a lightly greased ovenproof dish, pour over the prepared tomato sauce and sprinkle with Parmesan Cheese. Bake in a pre-heated oven, 190C, 375F, for 40 minutes..

Serve immediately with a crisp green salad.
