I Know What You Did Last Summer:
When Barry (Ryan Phillippe) jumps into the water when the fisherman sinks with Helen's crown, there are blood stains on his shirt. When he gets out they have vanished, but in another shot they are back again!
Since Sarah Michelle Gellar's character is named Helen Shivers, her family's store should be called "Shivers'," not "Shiver's."
When Helen is in the police car with the officer they see someone ahead. The officer gets out to tell him to move; behind him you can clearly see that the police car is empty even though Helen is in it.
I Still Know What You Did Last Summer:
A Colt revolver like the one Julie uses to shoot Ben Willis in the climax only holds six shots. Julie fires eight times.
After Ray's accident, he walks down the street his left arm is in the sling, and afterwards, every other shot shows his right arm in the sling. (this is probably due to the film being "flipped" to look better).
When Julie offers Ray to the Bahama's, and Ray hang's up, his friend Jay knows that she invited him to the Bahama's, without listening or anyone telling him.
