Two Simple but Exciting BBQ Recipes
With the good weather finally upon us, it's time to dust off the barbecue. Try serving these two simple kebabs as starters next time you light the coals. Both recipes make around 8 kebabs and can be prepared well in advance.
Smoked Oysters in Salami
| Ingredients: |
2x120g tin of Smoked Oysters, 24 slices of Salami |
| Preparation: |
Wrap each smoked oyster (two if small) in a slice of salami and skewer to secure. Use the oil from the oysters as a marinade storing in the fridge until required. |
| Cook: |
Until the kebabs are lightly browned. |
Haloumi Cheese and Onion
| Ingredients: |
2x250g packs of Haloumi Cheese, 6 small Onions |
| Marinade: |
50ml of Olive Oil, 1 clove of crushed Garlic, 100ml Shallot/White Wine Vinegar |
| Preparation: |
Cut the haloumi into 2cm cubes
Quarter the onions
Alternately skewer the haloumi and onion pieces on kebab sticks
Marinate in the mixture of olive oil, crushed garlic and vinegar, keeping refrigerated. |
| Cook: |
Until the onion is soft and the kebabs lightly browned.
Serve immediately whilst the cheese is still soft. |
