This recipe is perfect if you suspect someone of being a vampire, but just aren’t sure. Merely invite them to dinner, and serve this. If they eat it, or can even stay in the room with it, they are not vampires.

Serves 4

Ingredients:
40 small garlic cloves, unpeeled
1 bird (chickens are good), cut up into pieces
1/2 c. dry white wine
1/4 c. olive or salad oil
1 tsp. dried thyme
1/2 tsp. dried sage
1 Tbsp. minced parsley
4 small bay leaves
1 tsp. salt
1/4 tsp. pepper
French bread

The French, vampire-phobes from way back, would squeeze the soft, cooked garlic from the skin onto thin slices of browned French bread and eat with gusto. So should you!

Preset oven to 375 degrees. Scatter garlic cloves over bottom of Dutch oven. Place chicken pieces over garlic, skin side up (optional to skin chicken prior to cooking). Sprinkle remaining ingredients, except bread, over chicken, tucking bay leaves in between pieces. Cover pan with foil, then cover with lid. No steam should escape. Bake 1 hour. During last few minutes of baking, prepare bread by browning thin slices in hot oil.
When ready to serve, discard bay leaves. Place chicken on platter with garlic cloves. Serve chicken with a few cloves for each diner to spread on bread.
