1 can ceci (chick peas), drained (reserve liquid)
1/4 cup Tahini paste
3 or 4 Tbsps fresh lemon juice (to taste)
1 or 2 cloves raw garlic (to taste)
1 Tbsp basil (to taste)
dash or 2 of salt (to taste)
Drain chick peas and reserve the liquid. Mash chick peas with potato masher or semi-puree in blender or food processor. Add Tahini paste and lemon juice and mix thoroughly. Chop garlic, mince and press as finely as possible and stir in. Add basil and salt to taste; then add reserved liquid from chick-peas to desired consistency.
Experiment with various seasonings for variation as thou wilt. It's great for dipping pita wedges or as a sandwich base with lettuce, sprouts, cukes, etc.
