I got this recipe from my late father-in-law over 35 years ago, and he got it years before that from a bartender in Harrisburg, Pennsylvania. The bartender dumped in lots of tabasco sauce to make it flaming hot so that people would get thirsty and buy more beer. I think that sort of thing may be illegal now, but this cheese spread is still very good, whether made hot or mild.

1 lb. Cheddar cheese, sharp or extra sharp, grated
1 (4 ounce) jar of pimentos, mashed up a bit
1/3 cup cracker crumbs, preferably Ritz crackers or some sort of cracker with a higher fat content.
Worcester sauce, to taste
Tabasco sauce, to taste
salt, if necessary

Just mash and squish all these good things into a paste. Spread on crackers or on bread. Good on Ritz crackers, good on French baguette bread.
