This stuff is addictive, if you like olives.
Five parts olives, half of which are green, and half of which are black
One part capers
Garlic, unspecified amount, a couple of cloves (or more?)
Olive oil, enough to make a puree
I grind up the olives in my ol' hand-cranked meat grinder. If you didn't inherit an old fashioned hand-cranked meat grinder from your mother I don't know what you would use. A blender, perhaps? You want the olives to be the consistency of dog food, or of a can of corned beef hash.
I put the capers and garlic (cut up in bits - I find that whole garlic cloves don't blend well) and olive oil in the blender and blend till liquefied.
Then mix all these ingredients together into a spread. It's really good on bagel chips.
Hmmm....I wonder what would happen if I didn't use the hand-cranked meat grinder, but instead made the garic-caper-olive oil puree in the blender first, and then added the olives and blended till the mixture is dog
food/corned beef hash consistency....
