Potato Cakes


Ingredients:
6-9 medium to large sized potatos
A large amount of margarine or butter
Nutmeg
Black or Mixed Pepper
Flour

Pre-heat an oven to gasmark 7 (and no, I fucking don't know what that is in degrees)
Peel, cut up, and boil your potatos. Mash them. Add a lot of margarine, and your spices, and a little flour to the mix, until it reaches a malleable consistency. Now grag a handful of the mixture and form it into a small round cake. Coat thickly with flour, and spread a light coating of butter all over the flour. Repeat until you run out of mash. This should make about 6 cakes.

Put the cakes on a baking tray and put them in the oven until they go crusty on the outside (a breading effect produced by the floura nd margarine). This should take about 10 minutes or so. Take them out, take them off the tray with a spatuala, and serve with a couple of sauces.

NOTES:
Variants on this can be made by incuding lentils or baked beans in the mash. Lentils should be soaked and cooked (I microwave them) and then amashed in witht he potatos. Canned baked beans should be poured into the mash (they don't need to be heated) and mashed in. More flour should be added into the mix to counterbalance the liquid content of the beans. Both of these variants can then be cooked as normal.
