Elberberry Wine

Elberberry Wine

Steve Wilson

Get the largest waterproof container of glass or white plastic you can find. Wash it out with freshly boiled water just before:
Get as many blackberries, apples/pears (and a few elderberries) as you possibly can.
Crush.
Pour juice into container and cover with a loose cloth, maybe stretch an elastic band over it.
After about a week you will have a thick layer of yeast on top of the juice and a layer of dead yeast at the bottom. Get rid of live yeast, pour juice into wine bottles recently washed in boiled water without disturbing the sediment. Cover bottle with a coin and keep somewhere you can see them.
When you can no longer see bubbles rising in the bottles, boil up corks and insert them, or drink straight away.
The first mouthful will make your cheeks implode as this is much more rich in vitamin c than grape wine. The second mouthful will still take some swallowing. From then on in its drunk for nothing!
