 Ripon has a cathedral and a medieval market square.

 Wensleydale, Hawes, Ingelton, including pot-holing in the Kingsdale Master System; Ingleborough.

 Yorkshire Dales: River Wharfe, Skipton, Kettlewell, the area around Malham: Malham Village, Malham Cove, Malham Tarn, Gordale Scar, Janet's Foss and Janet's Cave; Cowside Beck, Littondale, Starbotton, Whernside, Penyghent, Settle, [Howarth and the Brontes].

 Saltaire is where industrialist and philanthropist Titus Salt built not only his mill, but also good quality housing for his mill workers (equivalent to New Lanark, Port Sunlight and Bournville). The former mill now houses the 1853 Gallery of David Hockney works (entrance: free; elevator for wheelchair access between floors); and good eating facilities at Salt's Diner, with friendly staff, and explicitly catering for vegans.

 North of England Sculpture Park, Bretton Hall, near Wakefield, is essential for anyone with the remotest interest in sculpture. It appears to have its own collection as well as frequently hosting exhibitions, such as by Andy Goldsworthy.

 North York Moors: Lyke Wake Walk (Osmotherly to Ravenscar) which I walked in late June 1982, Fountains Abbey, Mount Grace Priory; Pickering (visited several times during the 1980s and 1990s) and the North Yorkshire Moors Railway (from Pickering to Grosmont).

 Yorkshire and Cleveland coast: Redcar, Marske, Saltburn, Whitby (I am told that Whitby has three eating places which cater for vegans, which is surprising being an old-established fishing port; there is an establishment called Shepherds Purse, Wholefoods, Vegetarian Restaurant & Shop; 01-947-820-228, but I have no first hand experience), Robin Hood's Bay, spectacular cliff path from Staintondale to Cloughton (where I have stayed at Cober Hill several times), Scarborough.
