Highland cattle have healthy eating appeal. The beef is lean, firm and well marbled and from analysis has been
found to be significantly lower in fat and cholesterol than other beef while at the same time just as rich in protein
and iron.....factors which are a major consideration for many of today's consumers.

HIGHLAND CATTLE - THE BREED
Highlanders, known as the "pretty breed" and dating back to the fourteenth century, have developed into
efficient and versatile animals. They are hardy and largely self-sufficient, requiring minimal maintenance with
the additional ability to calve outside unaided and unattended. They are immune from many pests and diseases minimising
the need for medication.These cattle are exceptionally hardy coping with temperatures from 60 degrees below to
115 degrees.

At Pallingham Manor Farm these environmentally friendly cattle graze the wide open spaces of the River Arun water
meadows in the West Sussex area of outstanding natural beauty.

All beef produced is born and reared on our farm from our own stock of pure Highland Cattle ensuring full traceability
back through four generations. Animal health, welfare and feeding are regularly checked through independent inspections
by "Farm Assured British Beef and Lamb" Association. Beef from Highlanders produced under this scheme
is marketed through Highland Beef Ltd and is in demand from Britain's leading indipendant retail butchers.
