Brenda's favourite recipe for Coffee Cream
3 eggs * 1 pint of single cream * 14 oz can of condensed milk * 3 dessert spoons of camp coffee 1 cup whisky * 1 teaspoon vanilla essence. Mix all together on mixer slow speed for two minutes. Pour through muslin or fine sieve into bottle. Drink! An ideal drink at Christmas |

Pepperpot Beef
|
1oz flour 1 teaspoon salt 1/8 teaspoon pepper 1/2 teaspoon ground ginger 2lb braising beef, in 1 inch cubes 2oz lard or dripping 1 small red pepper, sliced 15oz can red kidney beans, drained |
Sauce:
1 teaspoon chilli sauce 8oz can tomatoes 1/4 lb mushrooms, sliced 1 tablespoon Worcestershire sauce 2 tablespoons soft brown sugar 2 tablespoons wine vinegar 2 garlic cloves, crushed 1 bay leaf |

Mix together the flour, seasonings and ginger and use to coat the beef. Heat the lard in a large pan, add the beef and fry quickly until browned, turning once. Drain on kitchen paper then transfer to a 3 pint ovenproof dish. Combine all the ingredients for the sauce and pour over the meat. Cover and cook at 325oF, Gas Mark 3 for about 2 hours or until the meat is tender. Add the red pepper and kidney beans 39 minutes before the end of the cooking time. The HRT Cake
4oz soya flour, 4oz whole wheat flour, 4oz porridge oats, 4oz linseeds, 2oz sunflower seeds
2oz pumpkin seeds, 2oz sesame seeds, 2oz flaked almonds, 2 pieces stem ginger chopped finely, 8oz raisins, approx. 3/4 litre soya milk, 1 tbs. malt extract
sp. nutmeg,
1 tsp. cinnamon, 1 tsp. ground gingerMETHOD: Put dry ingredients into a large bowl and mix thoroughly, then add soya milk and malt extract. Mix well and leave to soak for about half an hour. If mixture is too stiff, add more soya milk. Spoon into loaf tin lined with greaseproof paper and oil.
Bake in oven gas mark 5/190c for about 1 1/4 hours or until cooked through (test with skewer).
Turn out and leave to cool. Delicious with butter or spread.
Ideally, eat a slice a day.
