Easy chocolate fudge 1 lb eating-quality plain chocolate * Butter a pan, approximately 7"x10" or thereabouts. Break up the chocolate and melt gently in a large saucepan on the hob, or in a large casserole dish in the microwave (2 min on high, remove to stir, 1-2 further min on high.) Stir in the sweetened condensed milk and vanilla, and stir until well blended. Spread in tin and smooth level, refrigerate until set, and cut into squares. * Don't use cheap cooking chocolate. Most supermarkets have a good own-brand dark chocolate for eating, often in 400g bars. Try using a very dark chocolate (60-80% cocoa) to make up the full amount, for an extra rich version.
