Danish Apple Pudding

4oz/100g    butter
4oz/100g    sugar
1                egg
8oz/225g    self raising flour
12oz/350g  cooking apples, peeled and thinly sliced
2oz/50g      raisins/sultanas
2                dessert spoons of  brown sugar
half a teaspoon of ground ginger
Pinch of salt

Preheat the oven at Gas mark 4-5/375F/190C

Melt the butter and mix with the sugar. Add the egg and beat lightly. Sift the flour and salt into the mixture and mix (should be fairly stiff mix).

Grease a 8-9 inch cake tin and spread two thirds of the mixture over the bottom of the tin.

Mix the apple slices, dried fruit, brown sugar and ginger, place on top of the mixture, cover with the remaining mixture and cook for 40-45 minutes.
